Taco Bell Fresco Meals
Famed queen of reality one-liners Bethenny Frankel (of Real Housewives of New York fame) recently released a book, Naturally Thin. I scoped it out at Borders Books at Lovers and Greenville the other night. Let me tell you, friends... I love Bethenny as much as the next girl, but the concept really wasn't revolutionary. She believes you should control your portions, eat healthy, fresh foods, and if you want something bad for you - only eat a few bites because that's all you really need. Are you dying from shock? Nah, didn't think so.
Take advantage of this to toss some marinated chicken breasts on and let them smoke and cook through while you enjoy the burgers prepared earlier. Once the chicken breasts are cooked, bring them in and wrap to store in your refrigerator. Just that simple act has you well prepared to serve chicken salad sandwiches, grilled chicken salads, chicken tacos any number of menus without having to even re-fire the grill for a day or two.

Try the Enchiladas on Tuesday (beef, chicken, or cheese, with red, green, or mole sauce, served with beans and salad) or Thursday's Costillas de Cerdo (spare ribs in morita pepper sauce with rice, beans, and salad), both for under $5. You can also get a beef or taco chicken Salad for $5, or skip the meat and get it for $4.
Try One Dish Meals: There are a number of options for healthy one dish meals. Pasta dishes can have almost anything added to them, and you can utilize a slow cooker chicken taco to make a variety of well balanced dishes.
Have a Cooking Day: A great way to cook faster is to have a day where you prepare either several dishes or other necessary cooking for the week.
